The flower buds of the garlic, these shoots are removed in late June to give one last growth spurt to the bulbs.  Scapes are a favorite of culinary experts.  These curly green stalks are delicious to eat and taste like garlic when added to dishes.  Some claim that when grilled, scapes take on a flavor akin to asparagus.  Scapes are also wonderful for making pesto.
