Ajo Rojo is a hardneck, Creole variety of garlic that originated in Spain and came to the United States by way of the Spanish conquistadors. Ajo Rojo has a silky outer skin and typically has 8-12 cloves per bulb. Ajo Rojo garlic has a sweet taste with a warm and spicy finish, which enhances Creole and other dishes by finely chopping the cloves to release their heat. It is also great for salad dressings.
